Grilled Summer Squash & Zucchini


This is such an easy summer-time staple! The deliciousness of the char from the grill gives these veggies the biggest POP of FLAVOR.


I like to keep the seasonings simple in order to bring out the natural taste of the veggies. This recipe is a perfect side dish for any protein to create a volume-focused fat loss meal.


Ingredients
  • 3 yellow summer squash

  • 3 zucchini

  • Extra Virgin olive oil

  • Sea Salt & Black Pepper


Directions
  1. Cut the summer squash & zucchini into round 1" circles and place in mixing bowl.

  2. Drizzle the veggies with oil for a light coating and then add sea salt and black pepper to taste. (Tip: can substitute with a low calorie extra virgin olive oil spray for more calorie control)

  3. Set on grill (~4-5 minutes) each side to get that charred, crisp perfection.

  4. Enjoy as a side with any of your favorite protein!
