One of my favorite pizza crust brands is Wood Grilled pizza crust. They make a thin, whole wheat pizza crust that is ~ chef’s kiss~. You can typically find this crust at Whole Foods or order online (it's worth it).
If I am in the mood for pizza, I like to balance it with adding MORE veggies. This makes me feel satisfied and gut happy afterwards - so I get to enjoy my craving and still reach my health goals. Feel free to spruce this recipe up with any and all the veggies you like. Such as adding grilled zucchini and yellow squash or tomatoes.
Ingredients
Broccoli florets
Cauliflower florets
Spinach
Assorted bell peppers, sliced
Red onion, sliced
1 can of unsalted tomato sauce
Italian seasonings
Thinly sliced mozzarella cheese
1 Wood Grilled pizza crust
Directions
Heat 1 can of tomato sauce in a sauce pot and add Italian seasonings. Sitr together to mix. Remove from heat and set aside.
Pre-heat oven to 400 degree
Chop up broccoli and cauliflower florets into med-small pieces. Add to a bowl and set aside.
Slice bell peppers and red onion. Add to the bowl of mixed veggies.
Tear a handful of spinach leaves by hand and add to the mixed bowl of veggies.
With a spoon spread tomato sauce around wood grilled pizza crust until completely covered.
Spread the mixed bowl of veggies across the entire pizza until covered as desired.
Add 3-4 mozzarella slices around the pizza.
Bake in oven for ~20-22 minutes.
As a meal enjoy 2-3 slices and pair with a side salad or extra veggie side to add even more volume. Enjoy 1-2 slices as a mini meal/snack.
